Grilled Chicken with Roasted Red Pepper Sauce

  • 1 tablespoon olive oil
  • 1/2 teaspoon garlic, chopped
  • 14 oz Manischewitz® Chicken Broth (1 can)
  • 1 1/2 cup roasted red peppers
  • Cayenne pepper, pinch
  • 6 boneless skinless chicken breasts, 6 oz each
  1. In a medium sauce pan over medium heat, sauté garlic in olive oil 1 to 2 minutes.
  2. Add Manischewitz® Chicken Broth and simmer 5 minutes.
  3. In a food processor, purée roasted red peppers; add to broth.
  4. Add cayenne pepper to taste; remove from heat and keep warm; allow to set 5 to 10 minutes to let flavors blend.
  5. Grill chicken, turning frequently to avoid burning; grill until internal temperature reaches 170° (cooking time varies depending on thickness of meat).
  6. Place chicken on serving plates and top with sauce; serve with desired side dishes.
