Oven Roasted Squash with Zucchini and Pickled Fennel, Fingerling Potatoes and Spinach Horseradish Sauce

Ingredients

  • 3 large Acorn squash
  • 3 medium zucchini, diced into 1/2 inch chunks
  • Salt and pepper, to taste
  • 3 Tbsp olive oil, divided
  • 1 medium onion, sliced
  • 1 1/2 lbs fingerling potatoes or baking potatoes, cut into small wedges
  • 1 fennel bulb, cut into thin strips
  • 1/4 cup apple cider vinegar
  • 1 3/4 cups Manischewitz® Chicken or Turkey Broth

  • Spinach Horseradish Sauce:
  • 1 Tbsp olive oil
  • 1/2 Tbsp garlic, chopped
  • 1 3/4 cups Manischewitz® Chicken or Turkey Broth
  • 1 cup soy milk
  • 1-10 oz pkg. frozen chopped spinach, thawed
  • 1/4 cup prepared horseradish
  • Salt and pepper, to taste
Preparation:
  1. Preheat oven to 375 degrees. Cut each Acorn squash into quarters and sprinkle with salt and pepper. Drizzle with one tablespoon of the olive oil. Place cut sides up in a roasting pan and bake until tender, 25 - 30 minutes.
  2. Heat the remaining two tablespoons oil in a heavy saucepan, sauté onions, potatoes with fennel until browned, add diced zucchini and saute for an additional 2 to 3 minutes.
  3. Add vinegar and continue to cook for 2 to 3 minutes; add chicken stock and bring to a boil; remove from heat and place mixture in a large serving dish. Plate squash quarters on top of zucchini mixture.
  4. Serve with Spinach Horseradish Sauce.
  5. To make Sauce: Using a medium sauce pan, sauté garlic in olive oil; add Manischewitz® Chicken or Turkey Broth and simmer 5 minutes. Add soy milk and continue to simmer for an additional 5 minutes or until mixture starts to thicken. Squeeze excess moisture from spinach and add to broth mixture. Add horseradish and season with salt and pepper.
    Note: For a thicker sauce, add 1 Tbsp cornstarch.
