Soy Glazed Chicken with Red Wine Pears

  • 6 chicken breasts. 6 oz each
  • Salt and pepper, to taste
  • 2 tablespoons vegetable oil
  • 1/4 teaspoons garlic, chopped
  • 1/4 teaspoons fresh ginger, chopped
  • 14 oz Manischewitz® Reduced-Sodium Chicken Broth (1 can)
  • 1/4 cup soy sauce
  • 1 teaspoons sesame oil
  • 1 1/2 tablespoons cornstarch
  • Red Wine Pears:
  • 1 1/2 cup red wine
  • 1/2 cup sugar
  • 3 pears, peeled, cored and halved
  1. Lightly season chicken breast with a touch of salt and pepper.
  2. In a large skillet, pan sear chicken breast in vegetable oil over medium high heat, turning once; remove and keep warm.
  3. Using same skillet, sauté garlic and ginger; add Manischewitz® Reduced-Sodium Chicken Broth and simmer 5 minutes.
  4. Mix soy sauce, sesame oil and cornstarch together; add to broth mixture.
  5. Bring to a boil; reduce heat.
  6. Add chicken to broth mixture and simmer in sauce until internal temperature reaches 170° (cooking time will vary depending on thickness of chicken).
  7. Remove chicken; set aside and keep warm.
  8. Serve with red wine pears and drizzle with remaining sauce.
  • To make red wine pears:
  1. Mix red wine with sugar in a medium sauce pan.
  2. Submerge pears halves in mixture; bring to a boil.
  3. Simmer 3 to 5 minutes; remove from heat and let cool.
  4. Allow pears to remain in wine mixture until ready to serve.
Note: If desired, toss stir fry vegetables with remaining sauce and top chicken.
