Tomato Bruschetta

Ingredients

  • 1 tablespoon garlic, chopped
  • 1/4 cup red onion, finely diced
  • 3 tablespoons olive oil
  • 14 oz Manischewitz® Chicken or Vegetable Broth (1 can)
  • 2 cups Roma tomatoes, diced
  • 1/4 cup green onion, chopped
  • 1/4 cup fresh basil leaves, shredded
  • Salt and pepper, to taste
Preparation:
  1. In a medium skillet, sauté garlic and red onions in olive oil.
  2. Add Manischewitz® Chicken or Vegetable Broth and simmer 5 to 8 minutes or until almost dry.
  3. Remove from heat; add tomatoes, green onions and basil.
  4. Season with salt and pepper.
  5. Refrigerate for at least one hour to allow flavors to develop.
  6. Serve bruschetta on crostini or pita chips.
