Turkey Stew with Assorted Root Vegetables

Ingredients

  • 1/4 cup olive oil
  • 1 tablespoon garlic, chopped
  • 56 oz Manischewitz® Turkey Broth (4 cans)
  • 1 cup onions, 1" diced
  • 1 1/2 cups carrots, 1" diced
  • 1 1/2 cups potatoes, 1" diced
  • 1 cup celery, 1" diced
  • 1 cup rutabaga, peeled, 1" diced
  • 1 teaspoon dried rosemary
  • 1 teaspoon kosher salt
  • 6 cups cooked turkey, shredded or chopped
  • 1/8 cup cornstarch
Preparation:
  1. Heat oil in stock pot over medium high heat and sauté garlic for 5 minutes.
  2. Reserve 1 cup Manischewitz® Turkey Broth; add remaining broth to pot.
  3. Add onions, carrots, potatoes, celery and rutabaga; bring to a boil.
  4. Add rosemary, salt and turkey; cook an additional 10 minutes.
  5. Combine reserved broth with cornstarch; mix well.
  6. Add cornstarch mixture to pot and simmer 5 to 10 minutes.
