Wasabi Mashed Potatoes

Ingredients

  • 28 oz Manischewitz® Chicken or Vegetable Broth (2 cans)
  • 2 pounds baking potatoes, washed and cut into large chunks
  • 1/4 teaspoon salt
  • 1 tablespoon wasabi powder
  • 1/4 cup soy milk, unsweetened
  • 2 tablespoons margarine
Preparation:
  1. In a medium stock pot, combine Manischewitz® Chicken or Vegetable Broth with potatoes; bring to a boil.
  2. Cover and simmer 20 minutes or until potatoes are tender.
  3. Drain stock from potatoes and reserve.
  4. Add remaining ingredients and mash.
  5. Add drained stock to potatoes until desired thickness.
  6. Add additional salt, pepper and wasabi powder if desired.
